RECIPE: Asparagus and truffle focaccia

DOUGH:

- 1 smaller onion, chopped and caramelized in olive oil

- 1 dried tomato, sliced and caramelized with onion

- 50 g white wheat flour

- 100 g wholegrain wheat flour

- salt by taste

- 1 TBS oilve oil

- 1 teaspoon sunflower seeds Odlično

- 1 teaspoon flaxseed Odlično

- 1 teaspoon sesame seeds Odlično

- 1 teaspoon poppy seeds Odlično

- 1 teaspoon walnuts Odlično, chopped

- 1 teaspoon black sesame

- half teaspoon salt

- half of pack dry yeast

- water

Mix all ingredients and fold into dough. Let rise for about 30 minutes.  Spread the dought thinly over baking paper.

FILLING:

- half cup creme frâiche

- ground pepper

- half teaspoon ground garlic

- 2 TBS grated cheese

- half of truffle, sliced thinly (or teaspoon of truffle spread)

-  half pack asparagus

- 20 g pistachios Odlično

Season creme frâiche with pepper and garlic, mix in grated cheese and spread the mixture thinly over dough. Place truffles and asparagus on top and sprinkle with pistachios. Bake for 15 minutes at 195 - 200°C.
